Matured for at least 12 months, this prosciutto is prepared from carefully selected and pork thighs. The time of salting and drying depends on the weight of the raw material and takes place in strictly controlled climatic conditions. After 12 months, the previously tender red flesh acquires a more intense color, a characteristic aroma, and a firm but slightly softer structure. The product is salted with sea salt from the Piran salt pans. Long-term drying of pork thighs with bone in typical Karst Bora wind, which lasts at least 12 months, gives the prosciutto its characteristic quality and special recognition, as well as a milder, less salty taste.
